Kate's Tikka Masala!
Ingredients
2 tbsp olive oil
1 medium onion diced
3 garlic cloves minced
2 tbsp of Garam Masala paste
3 large tomatoes diced or
2 cans of diced tomatoes
2 inch piece of ginger grated
1 jalapeno pepper finely chopped discard seeds unless you like it SPICY!
2 -15 oz cans of chickpeas
1 cup of full fat coconut milk
hand full of cilantro chopped
I added a bit of pan flour to thicken!
Warm up oil in pan add onion and garlic until translucent.
Then add garam paste, ginger and pepper saute for another minute.
Add tomatoes and chickpeas bring to a boil.
drop to a simmer for 15 minutes add coconut milk
( I add a tsp spoon of thickening flour to coconut milk before adding)
Add cilantro cook 5 more minutes
We served it over a fantastic rice grown right here in NJ!
I cannot rave enough about this rice once you tried Marooned with its great nutty flavor and gorgeous maroon color you don't want brown or white rice again!
What a find, I love what a touch of block print can do to a room. The recipe is making me hungry! How wonderful that you and your daughter cook together.
